Pecan Brittle

Recipe from Clarice Bell of Ga.

1 Cup Sugar
1/2 Cup White Karo Syrup
1/4 teaspoon salt
1 tablesppon butter or margerine
1 teaspoon vanilla
1 1/4 cups chopped pecans

Mix the sugar, syrup and salt well and cook in a glass bowl on HIGH in microwave oven for 5 minutes. Remove from microwave and add 1 Tablespoon butter or margerine, 1 teaspoon vanilla and 1 & 1/4 cups chopped (not too fine) pecans.

Replace in microwave for 3 min. & 58 sec. Remove from oven and quickly add 1 teaspoon baking soda.

Mix well (quickly) and pour unto lightly greased foil (or release foil). Spread quickly with a thin table knife.

Let cool for about 20 minutes and break into pieces with hands

*To use Peanuts- Extend second time in microwave to 4 minutes and add raw SMALL peanuts (1 & 1/2 cup) in the beginning -on the 5 minute time, NOT later as in pecan brittle.
