THUMBPRINT COOKIES (makes about 6 dozen cookies)
1 c butter or margarine
¾ c sugar
2 tsp vanilla extract
1 tsp almond extract
2¾ c flour
hazelnuts, processed in food processor (walnuts work well too)
Jam (I like to use apricot and raspberry)
Beat butter, sugar, ,and extracts together until creamy. Chill dough 4 hours.
Roll dough into small balls. Roll each ball in nuts. Place dough balls on lightly greased cookie sheets. Press balls in center, making indentation. Fill centers with jam.
Bake at 300° for about 30 to 35 minutes.
